Passion-fruit ice-cream   
OK, OK, OK; this has nothing whatever to do with onions; I just like it. It's gorgeous.

8 passion-fruits - try to get a few which are still quite smooth and not too ripe.
1/3 tin (400g) of sweetened condensed milk
¼ pint pot of double cream.
Some clotted cream too, if you've got any.

Scoop the pulp out of the fruit, preferably leaving the stringy bits behind; place it in a bowl, add the condensed milk. Taste it, and if it needs more sharpness, add a good squeeze of lemon juice to taste. Whip the cream till it will stand up on its own, and fold it in to the mix.

Whisk it for all you're worth. Put it in the freezer until it's thickened up and starting to freeze; take it out again, whisk vigorously, and re-freeze. Repeat the last stage until you get bored, and then freeze.

It's delicious with cream or without, or scooped straight out of the container in the freezer...
