Courgette in tomato sauce  
Like Gigantes this is good for mopping up any left-over chopped tomatoes you may have, and quick to prepare.

Courgette
Tinned chopped tomatoes
1 fat clove of garlic
Thyme, salt, fresh ground black pepper.

Put the tomatoes, crushed garlic, pepper and thyme into a heat-proof oven dish and mix around; add salt to taste. Slice the courgette and add to the dish, mixing around to get it covered. Roast in a moderate oven (190 - 200 °C) for 30-40 minutes until the courgette is tender.
