Stir-fried noodles - submitted by Kimbo  
This can encompass just vegetables, or include cooked or fresh meat as desired; obviously fresh meat will need a longer cooking time. Ready-cooked noodles (I use Amoy Straight To Wok) are used for simplicity, and because there's nothing wrong with them.

Meat if required - chicken breast, lamb or beef.
1 small hot chilli
Root ginger
Olive oil
Carrot, broccoli & mushroom
1 - 2 cloves of garlic
Pack of ready-cooked noodles per serving
Soy sauce

Cut meat into large-ish chunks, mushroom ditto. Finely chop the chilli, and about 3/4 inch of fresh root ginger. Slice a carrot into matchsticks, and chop broccoli into handy-sized pieces.

Put a spoonful of oil in a large frying pan, and heat gently. If cooking the meat from raw, cook for a few minutes before adding the rest of the ingredients, to ensure it's properly cooked through, adding the chunks of mushroom a little later. Add chilli, ginger, crushed garlic, carrots & broccoli. Keep it on the move in the pan. When the ingredients are done to your taste, add the noodles, stir to mix well, and cook for a minute or so to warm through. Add a good splash of soy sauce, mix thoroughly, and serve, with a squeeze of lemon juice, and chilli sauce if required.
